W planach był tradycyjny sernik, lecz pogoda w pierwszych dniach października była tak piękna i ciepła, że powstał też sernik, ale na zimno. Dwukolorowy jogurtowiec to dyniowa wariacja na temat już sprawdzonego sernika z truskawkami. Goście byli zachwyceni, więc zachwycona byłam i ja. Polecam :)
Składniki:
Biszkopt kakaowy (średnica 24 cm):
2 jaja
1/3 szklanki cukru
55 g mąki pszennej tortowej
15 g kakao (ciemne, deserowe)
Przygotować blachę – u mnie tortownica o średnicy 24 cm. Wyłożyć samo dno papierem do pieczenia, boków niczym nie smarować.
Białka oddzielić od żółtek. Białka umieścić w misie miksera i ubić ze szczyptą soli na sztywną pianę. Dodać cukier w dwóch partiach, dokładnie miksując aż do całkowitego rozpuszczenia cukru. Dodać żółtka i zmiksować. Na końcu dodać delikatnie przesianą mąkę wraz z kakao i delikatnie wymieszać szpatułką lub rózgą.
Masę przełożyć do tortownicy, wyrównać szpatułką i stuknąć delikatnie o blat w celu pozbycia się niepotrzebnych bąbelków powietrza. Blachę wstawić do piekarnika nagrzanego do temperatury 170oC i piec około 25 min, do tzw suchego patyczka. Upieczony biszkopt wraz z blachą upuścić na podłogę z wysokości około 60 cm, wystudzić w formie.
Masa jogurtowa biała:
400 g jogurtu greckiego (1 duże opakowania)
1/2 szklanki cukru pudru (lub do smaku)
3 łyżeczki żelatyny
100 g śmietany kremówki
Masa jogurtowa bardzo szybko tężeje więc robimy ją tuż przed składaniem ciasta w całość.
Żelatynę zalać zimną wodą (około 1/4 szklanki) i zostawić do napęcznienia. Jogurt wraz z cukrem umieścić w misie miksera i zmiksować. Śmietanę kremówkę ubić. Napęczniałą żelatynę rozpuścić w kąpieli wodnej lub w mikrofali. Do żelatyny dodać 3-4 łyżki masy jogurtowej (zahartować), wymieszać i delikatnie dodać z powrotem do reszty masy jogurtowej, ciągle mieszając. Na końcu do masy jogurtowej dodać ubitą kremówkę i ponownie wymieszać.

Spróbować i dosłodzić w razie potrzeby. Śmietanę kremówkę ubić. Napęczniałą żelatynę rozpuścić w kąpieli wodnej lub w mikrofali. Do żelatyny dodać 3-4 łyżki masy jogurtowej z musem dyniowo-brzoskwiniowym (zahartować), wymieszać i delikatnie dodać z powrotem do reszty masy, ciągle mieszając. Na końcu dodać ubitą kremówkę i ponownie wymieszać.
Dodatkowo do dekoracji:
200 g śmietany kremówki
kakao (wg uznania)
Przygotowanie:
Gdy już biszkopt jest upieczony i wystudzony, przygotować pierwszą masę jogurtową.
Na wystudzony biszkopt nałożyć masę jogurtową, wyrównać szpatułką i schować do lodówki. Masa stężeje bardzo szybko, zdążymy przygotować w tym czasie drugą masę. Przygotować masę jogurtową z musem dyniowo-brzoskwiniowym. Tortownicę z ciastem wyciągnąć z lodówki, nałożyć na wcześniejszą masę jogurtową warstwę z musem dyniowym, wyrównać szpatułką. Włożyć do lodówki.
Tuż przed podaniem ubić śmietanę kremówkę i ozdobić wierzch sernika wedle uznania, można posypać kakao.
